Fathiers are a species of non-sentient quadrupeds that resided in the Star Wars galaxy, very similar to horses.  They were often used as mounts, and wealthy inhabitants of Kergans and Cantonica rode them in competition.  They first appeared in film, The Last Jedi.

If you told me I could only see one creature in the galaxy, it would be a fathier. Someday I want to see a fathier race! I wouldn’t even bet – I’d just watch!―Paige Tico

Fathiers have long legs, brown fur, and large ears and with their speed, they were sought after by wealthy residents of the galaxy, and the creatures were viewed as graceful and majestic.  The denizens of Cantonica on Canto Bight would gamble on the results of fathier races, much like we would on horse races.  A vast world of entertainment built up around the fathier racing, including casinos.  Whilst we can never experience the fun of Canto Bight in person, we can experience the equivalent in nj online casinos and get a flavour of the entertainment served up on Cantonica.
